This is a great, simple recipe when you want to make cut-out cookies. Pre heat oven to 400F degrees. Put the butter and both sugars in a stand mixer or mixing bowl. Cream together using a paddle attachment on medium speed, a handheld electric whisk or a wooden spoon for 1 to 2 minutes until paler but not fluffy. (Do not mix for too long; if you beat the mixture until super light and fluffy, that will cause the cookie to deflate later when cooking.) Beat in egg and vanilla. Mix flour and baking powder. Add 1 cup at a time,combining after each addition. You will need to add last 3/4 cup by hand. Do not chill dough it will be stiff. Divide dough into 2 balls. Pre heat oven to 400F degrees.
