One of my favorite ingredients to cook with is pumpkin. It adds delicious flavor to desserts, adds moisture and tenderness to breads and muffins, and adds fiber, vitamins, and minerals to everything it’s mixed with.
Here is a collection of all my favorite pumpkin recipes. Stock up while you can! This time of year it is readily available. I avoid Libby’s brand as their cans contain BPA. Trader Joe’s has organic pumpkin puree in the fall and it’s well priced at about $2 per can.
Most of these recipes only require about half the can of puree. You can refrigerate or freeze the rest until ready to use.
Healthy enough for breakfast and delicious enough for dessert!
