Oat Flour Chocolate Chip Cookies

Ingredients

  • 1 stick (8 tablespoons) salted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 2 cups oat flour (measure 2 cups rolled oats and blend as finely as possible)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rolled oats
  • 3/4 cup chocolate chips

Instructions

Blend the butter and sugars for 2 minutes, scraping down the sides as needed.

Add the egg and vanilla and mix until well blended.

Add the oat flour, baking soda, salt, rolled oats, and chocolate chips.

Mix until well blended.

Drop by rounded tablespoons (about 30 g) onto a parchment lined baking sheet.

Bake for about 10 minutes, or until edges start to brown. The cookies will firm up as they cool down.

Sprinkle the top with flaky salt, if desired.
