No Bake Peanut Butter-Oat & Chia Energy Balls

  • 6 large Medjool dates
  • 2 1/2 tablespoons water
  • 2 tablespoons pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • 3/4 cup peanut butter or almond butter 
  • 1/2 cup rolled oats
  • 2 tablespoons chia seeds
  • 2 tablespoons cacao nibs or mini chocolate chips

  1. Add all ingredients, except cacao nibs to food processor and run until we’ll incorporated.
  2. With damp hands, form into walnut sized balls. 
  3. Store in refrigerator.
