Mochi Waffles

  • 3/4 cups milk
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cup glutinous rice flour
  • 1/4 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  • Preheat a Belgian waffle iron.
  • In a medium mixing bowl add milk, egg, and vanilla extract. Whisk until well combined.
  • In another medium mixing bowl add flour, sugar, baking powder, and salt. Whisk until well combined.
  • Add wet ingredients to dry. Whisk until just combined.
  • Add 1/4 to 1/2 a cup of the batter to the waffle iron. Cook for 3-5 minutes or until golden brown.
