Kettner Exchange Kale Salad {Copycat}

Ingredients

  • 1 bunch curly kale (KE uses purple kale), finely shredded
  • 1/2 apple, thinly sliced
  • 1/3 cup cup golden raisins
  • 1/3 cup Marcona almonds
  • 2/3 cup grated Parmesan cheese
  • Dressing
  • 1/2 cup extra virgin olive oil (KE uses lemon-flavored olive oil)
  • 2-3 tablespoons lemon juice (KE uses less lemon juice)
  • 1 tablespoon honey
  • 1/4-1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • Dash of red pepper flakes

Instructions

Whisk together the olive oil, lemon juice, honey, salt, and pepper (or place in a jar and shake well).

Place the kale in large bowl and pour in some of the dressing. Massage the leaves until they are tender. Alternativley, you can toss the salad with the dressing 30-60 minutes before serving.

Add the sliced apples, almonds, raisins, parmesan; toss well to coat.
