Fried Rice with Butter Poached Shrimp


Shrimp:

  • 2 tablespoons water
  • 2 tablespoons butter
  • 1.5 lb large shrimp

Sauce:

  • 2 tablespoons soy sauce or tamari sauce 
  • 2 tablespoons oyster sauce or teriyaki sauce
  • 2 teaspoons sesame oil

Rice:

  • 2 tablespoons avocado or grapeseed oil 
  • 1/2 medium yellow onion, chopped 
  • 2 garlic cloves, sliced
  • 2-3 eggs
  • 4 cups leftover rice
  • 2-3 scallions, finely chopped
  • 1 cup frozen peas and carrots or shelled edamame

  1. Poach the shrimp:
    • Heat 2 tablespoons water and whisk in 2 tablespoons butter. Poach shrimp until just done; remove from heat and set aside.
  2. In a small bowl, mix together the ingredients for the sauce; set aside.
  3. Beat eggs in a bowl; set aside.
  4. Cook onions until soft, 8-10 kinutes.
  5. Add rice and stir to coat in onions.
  6. Add egg, sauce, and scallions.
  7. Stir in peas.
  8. Divide the rice into serving bowls and top with shrimp.
