Shrimp:
- 2 tablespoons water
- 2 tablespoons butter
- 1.5 lb large shrimp
Sauce:
- 2 tablespoons soy sauce or tamari sauce
- 2 tablespoons oyster sauce or teriyaki sauce
- 2 teaspoons sesame oil
Rice:
- 2 tablespoons avocado or grapeseed oil
- 1/2 medium yellow onion, chopped
- 2 garlic cloves, sliced
- 2-3 eggs
- 4 cups leftover rice
- 2-3 scallions, finely chopped
- 1 cup frozen peas and carrots or shelled edamame
- Poach the shrimp:
- Heat 2 tablespoons water and whisk in 2 tablespoons butter. Poach shrimp until just done; remove from heat and set aside.
- In a small bowl, mix together the ingredients for the sauce; set aside.
- Beat eggs in a bowl; set aside.
- Cook onions until soft, 8-10 kinutes.
- Add rice and stir to coat in onions.
- Add egg, sauce, and scallions.
- Stir in peas.
- Divide the rice into serving bowls and top with shrimp.
