This is as simple as it gets, but really is a delicious way to eat zucchini.
Cut the ends off the zucchini and then slice the zucchini into 1/2-inch thick rounds. Fill a medium skillet about halfway full with water. Bring the water to a boil over high heat; add 1/2 teaspoon salt to the water. You can also steam the zucchini but it takes a bit longer. Add the zucchini and reduce the heat to medium-high. Simmer, uncovered, for 10-12 minutes or until the zucchini appears opaque and tender enough to easily insert a fork into the slices. Drain the water and return zucchini to the skillet. Add butter to the pan and swirl around to melt. Add lots of freshly cracked pepper and salt to taste. Easy Zucchini
