1 (3-4 lb) boneless beef chuck roast
Kosher salt and pepper
1 tablespoon taco seasoning
Pre-heat oven to 325-F.
Place meat in a dutch oven or a baking pan. Liberally salt and pepper the entire piece of meat. Sprinkle with a tablespoon of taco seasoning.
Cover the pot with a lid or foil and place in the oven for one hour per pound of weight.
Lower the oven temperature to 275-F. Remove the meat from oven and break apart the meat into small chunks. Toss the chunks in the cooking liquid and return to the oven for 30 minutes.
