Cassava Flour Chocolate Chip Cookies (Gluten/Grain Free)

  • 1 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 1/4 cups (288g) cassava flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon (6g) sea salt
  • 1 1/2 cups chocolate chips

  1. Preheat oven to 375-F. Line a baking sheet with parchment paper.
  2. Cream together butter and sugars until combined.
  3. Beat in eggs and vanilla until fluffy.
  4. Mix in the dry ingredients until well combined. 
  5. Add chocolate chips and mix well.
  6. Roll 2 tablespoons of dough into balls and place 2 inches apart on cookie sheets.
  7. Bake for approximately 14-16 minutes or until they are lightly browned.
  8. Allow to cool on baking sheet for 2 minutes before removing to cooling rack. The cookies will firm up as they cool.
