- 1 cup butter, softened
- 3/4 cup white sugar
- 3/4 cup light brown sugar, packed
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/4 cups (288g) cassava flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon (6g) sea salt
- 1 1/2 cups chocolate chips
- Preheat oven to 375-F. Line a baking sheet with parchment paper.
- Cream together butter and sugars until combined.
- Beat in eggs and vanilla until fluffy.
- Mix in the dry ingredients until well combined.
- Add chocolate chips and mix well.
- Roll 2 tablespoons of dough into balls and place 2 inches apart on cookie sheets.
- Bake for approximately 14-16 minutes or until they are lightly browned.
- Allow to cool on baking sheet for 2 minutes before removing to cooling rack. The cookies will firm up as they cool.
