Chocolate Banana Baked Oats


Makes 2 servings

  • 2/3 cup rolled oats
  • 1 large banana
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons cacao powder
  • 2 tablespoons brown sugar
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 cup chocolate chips
  • 2 tablespoons melted butter
  • Milk, for serving

  1. Pre-heat oven to 350-F.
  2. Add all ingredients, except chocolate chips and butter, to a food processor or blender. Blend until combined.
  3. Pour into a buttered, 1.5 quart baking dish.
  4. Stir in chocolate chips and melted butter.
  5. Bake for 25-30 minutes, or until set in the middle. It will still jiggle a bit and be moist in the center.
  6. Serve warm with cold milk poured over top.
