Makes 2 servings
- 2/3 cup rolled oats
- 1 large banana
- 2 eggs
- 1/2 cup milk
- 2 tablespoons cacao powder
- 2 tablespoons brown sugar
- 1 tablespoon chia seeds
- 1 tablespoon ground flax
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 cup chocolate chips
- 2 tablespoons melted butter
- Milk, for serving
- Pre-heat oven to 350-F.
- Add all ingredients, except chocolate chips and butter, to a food processor or blender. Blend until combined.
- Pour into a buttered, 1.5 quart baking dish.
- Stir in chocolate chips and melted butter.
- Bake for 25-30 minutes, or until set in the middle. It will still jiggle a bit and be moist in the center.
- Serve warm with cold milk poured over top.
