Black Bean Dip

This is a quick, easy, and delicious black bean dip.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons jalapeno pepper, seeded & minced
  • 2 (15.5-oz) cans black beans, drained & rinsed
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/4 cup fresh cilantro, roughly chopped
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • Tortilla chips, for serving
  • OPTIONAL TOPPING:
  • 1/4 cup reduced-fat sour cream
  • 1 teaspoon fresh lime juice

Instructions

Heat olive oil in a medium skillet over medium-high heat.

Add onion and cook, stirring, until softened, about 5 minutes.

Stir in garlic and jalapeño and cook for 1 minute.

Place the beans in a food processor. Add the onion mixture and the rest of the ingredients and process until smooth.

Spread the dip into a wide, shallow serving dish.

For the topping, mix together the sour cream and lime; drizzle on top of the dip.

Serve with tortilla chips.
