Chicken Fingers with Bisquick and Parmesan

  • 2/3 cup Original Bisquick mix or homemade (see below)
  • 1/2 cup grated Parmesan cheese 
  • 1 teaspoon salt or garlic salt 
  • 1/2 teaspoon paprika 
  • 8 chicken tenders
  • 1 egg, slightly beaten 
  • 3 tablespoons butter, melted

  1. Heat oven to 450°F. Line a baking sheet with parchment paper.
  2. Mix all dry ingredients together in a shallow bowl.
  3. Beat egg into another shallow bowl.
  4. Dip a piece of chicken into the egg mixture and then place it into the bisquick mixture. Press to coat; place on baking sheet and repeat with the rest of the chicken.
  5. Drizzle each piece of chicken with about 1 teaspoon of the butter.
  6. Bake 12 minutes, turning after 6 minutes.

Homemade Bisquick (recipe found here)

  • 3 cups all-purpose flour
  • 1 ½ tablespoons baking powder
  • 1 ½ teaspoons salt
  • ½ cup butter, cold and cubed
  1. Add flour, baking powder and salt to food processor. Pulse to combine.
  2. Add butter and pulse until mixture is coarse and resembles cornmeal.
