Chia Pudding with Greek Yogurt

  • 1 cup vanilla-flavored unsweetened almond milk or regular flavored soy milk
  • 1 cup plain low-fat or non-fat Greek yogurt
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup chia seeds
  • Strawberries, raspberries, blueberries, sliced almonds (toasted), for serving

  1. In a medium bowl, whisk almond milk, yogurt, maple syrup, and vanilla until blended. 
  2. Whisk in the chia seeds. Cover and place in the fridge for 30 minutes or overnight.
