Steel Cut Overnight Oats with Strawberry Chia Jam

Note, this recipe uses steel cut oats rather than the traditional rolled oats. Unless you want an extremely chewy, somewhat hard bite, switch to traditional style.

Steel Cut Overnight Oats with Strawberry Chia Jam

Breakfast
Serves: 1-2

Ingredients

  • 1 cup chopped strawberries
  • 2 tablespoons chia seeds
  • 1/4 cup rolled oats
  • 1/4 cup steel cut oats (steel cut oats add an intense chewiness to this dish! Rolled oats can substituted).
  • 1/4 cup yogurt
  • 1/2 cup milk
  • 1 banana, divided

FOR THE CHIA JAM: Place strawberries in a pot with a tablespoon or two of water ➼ Cover and cook over medium heat, stirring occasionally, until the strawberries begin to release their juices ➼ Use a hand potato masher or the back of a wooden spoon to soften and break up the strawberries ➼ Lower to a simmer and continue to cook covered until the mixture reaches a jam like consistency ➼ Remove from heat; mix in the chia seeds.

OATS: In a bowl, mash 1/2 the banana; add milk and stir until well combined ➼ Add the steel cut oats and rolled oats ➼ Mix in the strawberry chia jam.

Slice the rest of the banana and add to the top.

Refrigerate overnight.
