Ultimate Skillet Corn Bread

Ingredients

  • ½ cup (70g) fine cornmeal.
  • 2/3 cup (83g) all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon sea salt
  • 2 tablespoons oil or butter
  • 1/3 cup low-fat milk
  • 1 large egg
  • 3/4 cup (or half a can) creamed corn (I like Green Giant Cream Style Creamed Corn)

Instructions

Preheat oven to 400-F.

In a medium bowl, whisk together dry ingredients. Add 2-3 additional tablespoons of sugar if you like a sweeter cornbread.

Mix in the oil (it will look like wet sand).

Add the milk and egg and mix.

Fold in the creamed corn.

Pour into well greased 8-10 inch cast iron skillet.

Bake 12-15 minutes or until a knife inserted into the center comes out clean.
