This recipe is adapted from the box of Trader Joe’s Thai Wheat Noodles. It can also be made with Lotus GF Rice Ramen Noodles
- *1 package Thai Wheat Noodles or Lotus Gluten Free Rice Ramen Noodles
- 1 tablespoon avocado oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1/4 cup scallions, chopped
Sauce:
- 2 tablespoons tamari sauce, soy sauce, or coconut aminos
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1/2 teaspoon coconut sugar
- 1/2 teaspoon fine salt
- *If using ramen noodles, they will need to be boiled first.
- Mix all sauce ingredients in a bowl and set aside.
- Add the garlic, ginger, and scallion; cook for 30 seconds.
- Add noodles and sauce. Toss until the noodles are fully coated by the sauce.
- Lower heat, and simmer – stirring occasionally until the sauce evaporates and the noodles start to brown.
