Quick Farro Salad

  • 1 cup quick cook farro (Trader Joe’s has a 10 minute one)
  • 1/2 cup apple juice
  • 1 cup water
  • 1 1/2 teaspoon salt, divided
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Freshly cracked black pepper
  • 2 scallions, finely diced
  • A handful of kale, stemmed and chopped
  • A couple sprigs of fresh mint leaves, stemmed and roughly chopped
  • A handful of walnuts, toasted and chopped
  • 2 ounces of feta cheese, crumbled

  1. Place farro, apple juice, water and 1 teaspoon kosher salt in a saucepan. Bring to a boil, simmer, and cook for about 10 minutes.
  2. Allow to cool for a few minutes and transfer to a salad bowl.
  3. Add the rest of the ingredients and toss.
