- 1 cup quick cook farro (Trader Joe’s has a 10 minute one)
- 1/2 cup apple juice
- 1 cup water
- 1 1/2 teaspoon salt, divided
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Freshly cracked black pepper
- 2 scallions, finely diced
- A handful of kale, stemmed and chopped
- A couple sprigs of fresh mint leaves, stemmed and roughly chopped 
- A handful of walnuts, toasted and chopped
- 2 ounces of feta cheese, crumbled
- Place farro, apple juice, water and 1 teaspoon kosher salt in a saucepan. Bring to a boil, simmer, and cook for about 10 minutes. 
- Allow to cool for a few minutes and transfer to a salad bowl. 
- Add the rest of the ingredients and toss.
