Note, this recipe uses steel cut oats rather than the traditional rolled oats. Unless you want an extremely chewy, somewhat hard bite, switch to traditional style.
FOR THE CHIA JAM: Place strawberries in a pot with a tablespoon or two of water ➼ Cover and cook over medium heat, stirring occasionally, until the strawberries begin to release their juices ➼ Use a hand potato masher or the back of a wooden spoon to soften and break up the strawberries ➼ Lower to a simmer and continue to cook covered until the mixture reaches a jam like consistency ➼ Remove from heat; mix in the chia seeds. OATS: In a bowl, mash 1/2 the banana; add milk and stir until well combined ➼ Add the steel cut oats and rolled oats ➼ Mix in the strawberry chia jam. Slice the rest of the banana and add to the top.
