- 4 cups shredded Napa cabbage
- 4 cups shredded kale (or more Napa cabbage)
- 4 scallions, thinly sliced
- 1 large carrot, shredded (shredded apple is good too)
- ½ cup chopped fresh cilantro
- ¼ cup chopped fresh mint
- ¼ cup chopped fresh basil
- ⅔ cup chopped roasted peanuts
- ¼ cup toasted sesame seeds
- Dressing
- 1/4 cup olive oil
- 2 tablespoons unseasoned rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/2 tablespoon toasted sesame oil
- 2 cloves garlic, finely minced
Mix all ingredients for the salad. Toss with the dressing, It tastes best if it can sit for a few minutes.
