Place the Greek yogurt in a large bowl and sprinkle in the dry ingredients. Stir until just combined. Make a well in the center of the mixture and whisk together the eggs and vanilla, then stir to combine with the rest of the batter until combined. Heat a griddle or skillet over medium-low heat and spread a little butter over the surface. Pour 1/4 cup batter for each pancake. Cook first side until bubbles form. (I find I have to cover the pan to get them to cook through). Flip them to the other side and cook for another minute or so.Greek Yogurt Pancakes
