I love this salad at Beaming but have yet to try this recipe.

Ingredients

  • 1 bunch curly kale
  • 1 cup fennel (shaved)
  • 1/2 cup goji berries
  • 3 tablespoons hemp seeds
  • DRESSING
  • 1 cup raw organic cashews (soaked for 2-4 hours)
  • 2 tablespoons fresh lemon or lime juice
  • 1 tablespoon raw honey
  • 1 tablespoon dried onion flakes
  • 1-2 tablespoon fresh chopped basil
  • 1-2 tablespoon fresh herbs of choice
  • 2-4 cloves fresh garlic, minced
  • sea salt & fresh ground pepper

Instructions

Destem the curly kale and chop and massage with your hands to soften and reduce the bitterness of the kale with lemon juice, a little olive oil and salt & pepper.

Add the dressing, shaved fennel, goji berries and sprinkle with hemp seeds.

For the dressing: Put the soaked drained nuts and water in a vitamix blender and blend well. Add remaining ingredients until creamy.
