Baked Cod or Salmon with Garlic Butter

  • 4(6 oz) cod or salmon filets
  • 3 tablespoons butter, softened
  • 1 tablespoon olive oil (I skip this)
  • 1 large garlic clove, minced
  • 2 tablespoons parsley, minced
  • 1/4 teaspoon paprika
  • 1 lemon
  • Kosher salt and pepper


  1. Pre-heat oven to 400-F.
  2. Place the filets in a baking dish. Sprinkle both sides with salt and pepper.
  3. In a small bowl, mix together butter, olive oil, garlic, paprika, and half the parsley.
  4. Spread the butter mixture on top of each filet.
  5. Slice half the lemon and reserve other half. Place a slice of lemon atop each filet.
  6. Bake for 15 minutes, or until internal temperature reaches 145-F.
  7. Remove from oven and squeeze the half lemon into the accumulated juices in the baking dish. Tip the dish and spoon the juices over the top of each filet. Sprinkle the rest of the parsley evenly over each filet.
