Germinated (Sprouted) Brown Rice

  • 1 1/2 cups brown rice (I prefer short grain)
  • Filtered water to cover about an inch over the rice

  1. Rinse brown rice and place in a bowl.
  2. Add water to about an inch above the rice. Allow to soak 8 hours or overnight.
  3. Pour rice into a strainer and rinse well. Set the strainer over the bowl to drain. Cover with a clean dishtowel.
  4. Every 8 hours, rinse the rice well and place back on the bowl to strain, covered.
  5. After 24 to 72 hours, small sprouts will appear.
  6. Refrigerate or freeze the rice until ready to use, otherwise the sprouts will continue to grow.

COOKING THE RICE

  1. Place sprouted rice in a pot. Add 2 cups of water, and 1 teaspoon salt.
  2. Bring to a boil and then reduce to a simmer.
  3. Cover, and cook for 30 minutes. Turn off heat and allow to sit for 10 minutes).
