- 1 1/2 cups brown rice (I prefer short grain)
- Filtered water to cover about an inch over the rice
- Rinse brown rice and place in a bowl.
- Add water to about an inch above the rice. Allow to soak 8 hours or overnight.
- Pour rice into a strainer and rinse well. Set the strainer over the bowl to drain. Cover with a clean dishtowel.
- Every 8 hours, rinse the rice well and place back on the bowl to strain, covered.
- After 24 to 72 hours, small sprouts will appear.
- Refrigerate or freeze the rice until ready to use, otherwise the sprouts will continue to grow.
COOKING THE RICE
- Place sprouted rice in a pot. Add 2 cups of water, and 1 teaspoon salt.
- Bring to a boil and then reduce to a simmer.
- Cover, and cook for 30 minutes. Turn off heat and allow to sit for 10 minutes).
