Rinse beans, then place in a large bowl and cover with 2 inches of water. Allow to soak at room temperature 8 hours or overnight. Drain and rinse beans. Place beans in a large pot and add 6 cups of fresh water. Add all spices, except salt. Bring to a boil, then reduce and simmer for 1 to 1 1/2 hours, or until tender. Add salt.Black or Pinto Beans
