Sheet Pan French Toast

Serves 4

  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 1 cup milk
  • 8 slices regular sandwich bread

  1. In a medium bowl, whisk together eggs, vanilla, brown sugar, cinnamon, and salt
  2. Add melted butter and milk; mix well.
  3. Set one rack in the lowest position of the oven. Set another rack 5-6 inches from the broiler. Pre-heat oven to 425-F.
  4. Spray an 18 x 13 inch rimmed baking sheet with cooking spray.
  5. Pour custard mixture onto pan. Lay each slice of bread onto the pan. Flip over each piece of bread to coat; place pan in oven on lowest rack.
  6. Bake for 10-15 minutes, or until bread is browned on the bottom.
  7. Place the sheet pan on top rack and set oven to broil. Cook for 1-4 minutes, or until the top of the bread is browned.
  8. Remove from oven and immediately flip each piece of bread (the residual heat will steam the top in case broiler dried it out).
  9. Serve immediately with butter and syrup.
