Delicious Whole Grain Squash Pancakes—I was making stuffed squash for dinner and after hollowing out a dozen or so squash I had a big pile of core leftover. I usually just make zucchini bread but decided to try zucchini pancakes. I came across this great recipe from @twopeasandtheirpod.com and was so wowed with how incredibly delicious they turned out! The kids gobbled them up and asked for more. I’m so glad to find yet another use for squash core! In my effort to steer my kids away from becoming the sugar addict their dad once was, desserts are a weekend treat in our house. However, I also don’t want to make sweets a taboo thing they will ultimately OD on one day. I decided to sprinkle in a few more treats to the weekly rotation, with the compromise that the extras would be healthier and free of processed sugar. I’m pleased to say my repertoire of healthy treats has grown and I now have a few go-to’s that manage not to induce any sideways glances. When I came across this recipe for Fluffy Flourless Peanut Butter Chickpea Muffins on @Ambitiouskitchen.com I was both intrigued and skeptical. Garbanzo beans, peanut butter, eggs, dates, and a token sprinkling of chocolate chips. Really?? Yep.
I can’t say they have the texture of a regular muffin, but they are yummy nonetheless. They certainly hit the spot when you want a sweet treat and they’re a great way to sneak in a serving of beans. See my version of the recipe at Janine’sRecipes.com

Baked Oatmeal Cups! I absolutely love this recipe! Baked oatmeal cups are totally delicious and incredibly versatile. You can eat them on the go as you would a muffin, or enjoy them hot out of the oven, in a bowl with milk and fruit. For more recipes visit THErecipequest.com
3 cups old fashioned oats
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 cup maple syrup
1 tablespoon brown sugar
1 cup mashed ripe banana
1 1/2 cups milk
2 eggs
3 tablespoons melted butter
1 teaspoon vanilla extract
Optional mix-ins: chocolate chips, fresh/frozen blueberries, pecans

Preheat the oven to 350 degrees F. Grease a 12 cup muffin tin with butter, oil, or cooking spray.
Mix all the ingredients in a bowl.
Fill muffin tin all the way to the top.
Sprinkle nuts on top (or any toppings desired).
Bake for 20-25 minutes or until golden brown and firm to the touch.
Cool for 5-10 minutes, then transfer to a baking rack.
Store in the refrigerator.

Anyone have a recipe for Ethiopian Timatim Firfir Salad? There really isn’t much on the web. This strange looking creation is one of the best salads I’ve ever tasted. I had it at a party and asked what the ingredients were. It has Injera bread, berbere powder, tomatoes, onions, lemon juice, and olive oil. It was so good! I’d love a recipe! .

Lebanese Spinach Pies - I watched my mom make these and they are surprisingly easy. She basically made a spinach salad with thinly sliced red onion, lemon juice, olive oil, salt & pepper- then squeezed out the liquid, put some onto a piece of rolled out dough, and folded them up. We didn’t have an egg on hand, but ideally you would brush them with an egg wash to get a nice golden color. Bake at 425 until nicely browned.

There’s something special about using a sourdough baguette for French Toast. It’s crusty, hearty and toothsome, and the sourdough adds a wonderful dimension of flavor. In this recipe I used
6 large eggs
½ cup cashew milk
2 tablespoons sugar
1 teaspoon kosher salt
1 teaspoon cinnamon
½ teaspoon vanilla
4 tablespoons butter .
